Korean Style Egg Rice Bowl (Gyeran Bap)

Ingredients  

1 egg 

1 cup of warm cooked short grain rice 

Green onion 

Sesame seeds toasted

Gochujang  (optional)

Rapeseed Oil (or any oil of your choice) 

Soy sauce 

Extra Toppings (if desired)

Kimchi

Nori

Beansprouts

Chopped cucumber

Method

  1. Cook your rice: Using a saucepan or in a rice cooker, prepare your rice, and once cooked, leave to cool and set aside. 
  1. Cook your egg: Add 1 tbsp of rapeseed oil to your pan. Heat the pan over medium-low heat and swirl to coat the surface evenly. Gently crack your egg into the pan. Cook for 1 to 2 minutes until the outer whites turn opaque and begin to set. Drizzle 1 tsp of soy sauce directly over the egg whites. Cover the pan with a lid for 30 to 60 seconds to let the steam finish cooking the top whites while keeping the yolk runny. Turn off the heat and set aside.
  1. Assemble: Add your cooked rice into your bowl of choice. Then slide your cooked egg on top. Sprinkle your green onion, toasted sesame seeds and gochujang. Add extra soy sauce for an enhanced flavor.
  1. Extra toppings: If desired, add your extra toppings of choice to your bowl and enjoy.

Mushroom and Spinach Omelette (with a hint of Rosemary)

Ingredients 

3 large eggs 

15g mushrooms

30g spinach 

Pinch of rosemary

1 tbs olive oil (or rapeseed oil) 

Black pepper for taste

Method

1: Heat the oil in a non-stick pan over medium heat. Sauté the mushrooms and spinach until the mushrooms are golden and the spinach is completely wilted. Remove the vegetables from the pan and set them aside on a plate.

2: In a bowl, beat the eggs thoroughly with the black pepper. Not to over power the omelette with rosemary, add a small pinch.

3: Pour the beaten eggs into the hot, empty pan. Let it sit for 10 seconds, then use your spatula to gently push the cooked edges toward the center, tilting the pan so raw egg fills the gaps.

4: When the egg is mostly set but still slightly wet on top, spoon your cooked mushrooms and spinach over one half of the omelette.

5: Use your spatula to fold the empty half of the omelette over the vegetable filling. Cook for another 30 seconds until heated through, then slide it onto a plate.

Extra tip: Add a sauce of your choice (such as ketchup or garlic aioli) as a topping, and enjoy.

Easy to Make Savory Porridge (with egg)

Ingredients 

  • 40g porridge oats
  • 120ml milk (any kind) or water
  • 1 large egg (whisked, to stir into the oats)
  • 1 tsp soy sauce (plus extra for drizzling)
  • Black pepper to taste
  • Optional Toppings: 1 extra egg (fried, poached, or boiled), chopped green onions, or soy sauce.

Method

1: In a saucepan, combine your oats and liquid (milk or water). Bring to a gentle simmer over medium-low heat, stirring occasionally for 3 to 4 minutes until the oats begin to thicken.

2: In a separate bowl, thoroughly whisk your egg with the soy sauce

3: Turn the the stove to low heat. While stirring the porridge with one hand, slowly pour in your whisked egg mix into the saucepan with the other hand. (Note: Constant stirring creates a smooth, velvety, custard-like texture instead of scrambled eggs).

4: Keep stirring on low heat for 1 more minute until the porridge is thick, creamy, and the egg is fully cooked.

5: Pour into a bowl, season with black pepper, and add your desired toppings like a fried egg, chopped green onions or soy sauce

6: Extra toppings: add a poached, hard boiled or fried egg and soy sauce on top. If desired, sprinkle green onions and enjoy.

Poached Egg and Smashed Avocado Sourdough Toast

Ingredients 

1 eggs 

1 Avocado 

2 slices of sourdough 

½ tbs rapeseed oil (olive oil)

lemon juice

2 halved tomatoes

Green onion

Black pepper or a pinch of chilli flakes (for seasoning options)

Method

1. Prepare your avocado: Peel and cut your avocado and smash it in a bowl. Squeeze a small amount of lemon juice and add black pepper into the mix.

2. Poach your egg: Start by heating a small saucepan with boiling water. once bubbling, get a spoon and swirl the water, then carefully crack your egg into the swirl, then leave for 3-4 minutes until the whites are cooked. 

3. Assemble: Placing your toasted sourdough on a plate, and spoon out your smashed avocado and spread on top. Remove the egg from the saucepan and place on top of the avocado, then add your halved tomatoes.

4. Extra toppings: Sprinkle black pepper or chill flakes on top and enjoy.
