Have you ever thought about sweet potatoes turning into brownies? No? Well now you have. This is our rich sweet potato brownie recipe that you can make to get you in the autumnal spirit. While sweet potatoes are considered a super food, baking them into a sweet treat still means enjoying the health benefits. 

Sweet potatoes are packed with many health benefits and contain many vitamins, fiber and minerals which are beneficial for eye, bone, gut and brain health. They support the immune system, may have cancer-fighting properties and taste super delicious.

Ingredients 

  • 2 medium sweet potatoes (400g)
  • 200g of 70% cocoa, chopped.
  • 125g creamy almond butter or peanut butter
  • 80ml to 120ml pure maple syrup or honey
  • 2 large eggs (or flax eggs for a vegan option)
  • 25g to 50g cocoa powder or raw cacao powder
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 pinch of salt
  • 50g extra dark chocolate chips (for topping)

Equipment

  • 20cm square tin baking paper 
  • Large mixing Bowl
  • Heatproof bowl for the melted dark chocolate (or you can use a saucepan) 
  •  Whisk
  • Wooden spoon
  • Sharp knife
  • Recipe 
  1. Cooking the sweet potato: Start by cooking your sweet potato. If you choose to cook in the oven, leave them to roast for about 40-50 minutes at 200°C, or place in the microwave for 7-10 minutes until they are completely soft. Once the sweet potatoes are cooked, scoop out the flesh, and use the inside of the sweet potato and mash until they are smooth.
  2. Prep: Preheat your oven to 180°C and line your tin with the baking paper and put aside.
  3. Adding your wet ingredients:  In your bowl, crack your eggs and whisk them with your maple syrup, nut butter, and vanilla extract until smooth. Melt your chopped dark chocolate in a separate bowl, then pour into your cooled sweet potato mash and stir.
  4. Adding your dry ingredients: Sift in the cocoa powder, baking powder and a pinch of salt. Gently fold till your brownie mix is thick. Then pour the mixture into your tin, and spread evenly and add your dark chocolate chips on top.
  5. Baking and cooling: Place your batter into the oven for 20-30 minutes, or until the center of the brownies have firmed up, and take out and leave to cool. Cut your brownies into squares and enjoy.
